Dinner tonight was not particularly exciting: store bought satay chicken kebabs, salad, baked potato, bbq'd tortillas brushed with a mixture of butter, garlic and fresh herbs.

But dessert! I got to set things on fire!

Halved stone fruits cooked in a heavy pan in a butter/sugar mixture with added water, vanilla essence and cardamon pods, cooked for a few minutes until the syrup is caramelising.

Then one adds quarter of a cup of rum, brings a match near the pan and WOOOSH. The whole thing goes up. I swear the flames were half a metre high, and I kept wondering if it was supposed to be that high or burn for that long. Not that it actually burned for a long time, but it felt like it did.

Eaten with clove marscapone or a cup of milk with freshly grated nutmeg sprinkled over.

It was such fun! And it tasted good. I want to make it again.

That sounds like such fun! I am tempted to try it with the leftover fruit salad from last night's party. But does the rum have to be a particularly high 'proof' for that to work?

I just used Coruba (which is 37.2%) since we had it in the house. I'm sure something with a lower alcohol percentage would also work. Try it and see.
